  • Garlic - 2 cloves

  • Mushrooms - 4-8 washed & small diced

  • Yellow Onion - 1/2 (small dice)

  • Miso Paste - 2 tablespoons

  • Salt - 1/2 teaspoon

  • Smoked Paprika (optional) - 1 teaspoon

  • Oats - 1/4 cups + 1 - 4 tablespoons oat flour (ground up)

  • Egg - 1 (or egg replacer)

  • Oil (avocado or canola for pan searing) - 4 tablespoon

Supplies:

  • Medium Stock Pot

  • Medium bowl

  • Cutting Board

  • Chefs Knife

  • Non-Stick Pan

  • Measuring Cups

  • Measuring Spoons

  • Microplane

  • Rubber Spatula

Recipe:

  1. Cook Lentils

    • 2 cups of water or broth in a med stock pot with dried and rinsed lentils

    • Bring to a simmer put a lid on it cook for about 20 mins.

    • You want the lentils to be tender, not total mush

    • If excess water is left when lentils are cooked, strain out liquid, place lentils in medium bowl.

  2. Garlic

    • Microplane directly into bowl, more garlic = more spicy

  3. Mushrooms + Onions

    • Wash mushrooms, remove stems, small dice/ take half and onion and dice small - same size as mushrooms; sauté in non stick pan with a little oil and salt to help release liquid.

    • Once lightly cooked, about 5 mins at a low heat, toss into bowl with lentils.

  4. Add to bowl.

    • Miso paste, paprika, salt, oats, oat flour, egg

    • Mash together with your hands or rubber spatula

    • Mush together lentils to make a nice consistency so you can patty it out.

Something We Learned: If the texture is too sticky to form patties, add more flour, if it is too dry/crumbly add some oil or water, you want the patties to form, but you don’t want them to stick to your hands (or they will stick to the pan!!).

  5. Cook

    • Heat up nonstick pan and add oil

    • Lay 2 - 3 patties in the pan at once, medium heat, about 2 mins each side

    • Finish in the oven - 350°F - 10 mins or until internal temp 160°F

Shelf life: These freeze well, if you lay them on a sheet pan in the freezer until fully frozen, then place them in an sealed container, for about 3 months. To reheat a patty from frozen throw it in a pan with some oil and throw a lid on it or cook it up in the oven at 300 for about 20 mins, until internal temp reaches 160.
